Fresh-Frozen Oysters with Garlic Chili
Oysters on the half shell, arranged across black plates. The shells are rough and grey outside with a pale pearly interior, and each oyster holds a plump, glossy white meat sitting in its own liquor. Most are topped with a spoonful of chopped garlic and one or two slices of red chilli, while a couple at the back are left plain.
The meat is smooth and briny with a soft, yielding texture. Serve them raw on the half shell with lemon, grill them until the garlic turns golden, or steam them briefly and dress with soy and spring onion.
