Fresh-Frozen Whole Red Snapper Fish
Whole red snapper, two fish laid side by side on a white plate, the skin a bright coral red shading to silver along the belly and the scales still glossy. The eyes are clear and full, the fins are intact, and each fish is topped with shreds of ginger and lengths of spring onion over a shallow pool of pale soy dressing.
The flesh is white and fine with a clean, sweet flavour, and the fish are sized to cook whole. Steam them with ginger and spring onion, grill them over a hot fire, or score the skin and pan-fry until it crisps.
