The strands are fine, long and evenly cut, each one red-orange on the surface and white through the middle, with a glossy, slightly oily sheen where they catch the light. They tangle together in loose mounds, and behind the plate sit steel trays and tubs in a working kitchen.
The strands are firm and chewy with a savoury, lightly sweet taste. Serve them as they are with a drink, toss them with chilli and sesame, or add them to a stir-fry at the end of cooking.
